Post Mortem, Conclusive!

When I was twelve years old I was laid out by bronchitis, then pneumonia for about three months. During that time I became well acquainted with daytime television, weather it was good or bad. What I remember of the good was mostly QUINCY.

Along with the likes of Doctor WHO, Mr.Spock, and Professor Julius Sumner Miller, Quincy was one of my early roll models, and inspirations.

THE GRAIN BILL

  • 11 Pounds 2-row
  • 5 Ounces crystal
  • 1 Pound wheat malt
  • 2 Ounces special-b
  • 2 Ounces black patent
  • 2 Ounces roasted barley

THE MASH PROFILE

Strike with 12.6 Litres @ 75° Celsius for 66° Celsius. Rest for 90 Minutes.

THE RESULTS

For the second time in a row the mash worked perfectly, however this time around the sparge was a bit lame.

The major feature of this beer was a switch from dark crystal to Dingmans Special-B.

  • 1.5 Ounces goldings boil
  • 0.75 Ounces goldings/0.75 Ounces fuggles finish
  • 1 Ounce fuggles dry

Pitched Wyeast 1028.

What impressed me about this brew was how the Special-B came out in the aroma. It almost smelled like freshly lautered sweet wort, which put me off at first because I would momentarily have the sensation of drinking unfermented beer. However, once I got used to it, I loved it.

This is one of the few times so far that I can say that a brew did not work out, but for the right reasons. What do I mean? Well, the brew was an ultimate failure because it didn't resemble Hobgoblin. In every other way (except perhaps the OG) it was a total success!

Now, to celebrate. How about some uncommon enchantment?
