Hennig Wichmann

IPA #2

Hennig Wichmann was another 14th century pirate, and this is another IPA. This beer marks my long awaited departure from English hops.

THE GRAIN BILL

  • 12 Pounds 2-row
  • 10 Ounces carastan

THE MASH PROFILE

Strike with 13 Litres @ 76° Celsius for 66° Celsius. Rest for 60 Minutes.

THE RESULTS

There's always something... The strike was absolutely perfect. I must have been overcome with joy because when it came time to mash out and recirculate, I did it a little to fast, and the mash stuck.

Also, the sparge was to hot for a couple minuets, and in fear of astringency, I added a little cold water to correct it back down below 75° Celsius.

  • 1 Ounce columbus boil (15 AAU)
  • 1 Ounce centennial finish
  • 1 Ounce centennial dry

Pitched wyeast 1335.

OG: 1.053

TG: 1.016

It was certainly nice to smell something different during the boil. That high pitched aroma of columbus has started wheels turning in my head. In the end, the beer turned out really well. It was a good apology for IPA#1 I'm also developing a fondness for carastan. How can I describe a simple 2-row/carastan grain bill? It's like just the right amount of butter, on lightly toasted white bread.
