Calico Jack

IPA #4

Yet another IPA, named after a Pirate.

THE GRAIN BILL

  • 13 Pounds pilsner malt
  • 8 Ounces carastan
  • 1 Pound wheat malt
  • 1 Pound barley flakes

THE MASH PROFILE

Strike with 15.5 Litres @ 75° Celsius for 66° Celsius. Rest 40 Minutes.

THE RESULTS

Kind of a shaky strike. First it was too low, then too high. I had to add, and subtract hot water from the mash tun a few times in order to narrow the temperature down.

  • 1 Ounce columbus boil
  • 1 Ounce columbus 30 Minutes
  • 1 Ounce columbus finish
  • 1 Ounce Columbus dry

As you can see, this beer was all about columbus. Looking back though, it was probably a silly idea to add carastan to a grain bill full of pilsner malt.

Pitched wyeast 1028

Again, I was a bit disappointed by the gravity. The sparge temperature was OK, so perhaps I have a tendency to develop channeling in the grain bed. Hmmm.
