Yet another ATEMPT at an IPA, named after a Pirate.
THE GRAIN BILL
- 11 Pounds pilsner malt
- 8 Ounces carapils
- 1 Pound barley flakes
THE MASH PROFILE
Strike with 12.5 Litres @ 75° Celsius for 66° Celsius. Rest 60 Minutes.
THE RESULTS
Naturally, I became nervous after nothing when wrong with the mash.
- 1.25 Ounces simcoe boil (15 AAU)
- 1 Ounce simcoe 30 Minutes
- 1 Ounce simcoe finish
- 1 Ounce simcoe dry
For all it's flaws, this beer gave me a good idea of just how special simcoe is as a finishing hop. If you have a grain bill that's as clean as a whistle, consider simcoe for some extra clarity. It's like shoving pine needles up your nose, and biting into a fresh lemon... in a good way. I recommend it.

I've finally come to terms with the fact that I haven't accomplished an IPA as of yet. One way, or another, I've just been brewing over hoped pale ales. There is some room for doubt in this case as I forgot to take an original gravity reading. Looking at the grain bill though, I must have been hung over when I drew it up. It's not what grain I used, it's the quantity.

One final note. I don't think that piracy should be romanticised, but at least it's a more honest, and transparent approach to getting your own way than is politics.
